The guides and calculators on Coolaid Blog are here to help you bake with more confidence. Please read this disclaimer so you know what they can and cannot do.
Calculator results are estimates
The calculators use standard baking formulas and are tested against known examples, but their results are estimates and guides, not exact predictions. This is especially true of fermentation times, starter peak times and schedules. Real results vary with:
- your flour, its protein content and how much water it absorbs;
- the strength and activity of your starter or yeast;
- the temperature and humidity of your kitchen, and your climate;
- your equipment, oven and bakeware.
Treat every figure as a starting point. Watch and feel the dough, and adjust to what you see. Dough that is ready will tell you, whatever the clock says.
Food safety
- Raw flour and raw dough. Flour is a raw ingredient and can carry harmful bacteria such as E. coli. Raw eggs can carry Salmonella. Do not eat raw dough or batter, keep raw dough away from ready-to-eat foods, and wash your hands, bowls and work surfaces after handling it.
- Bake thoroughly. Make sure bread and baked goods are fully baked before eating them.
- Allergies. Many recipes and guides on this site involve common allergens, including wheat and gluten, milk and butter, eggs, nuts, sesame and seeds. Always check ingredient labels, and take care with cross-contamination if you or anyone you bake for has an allergy or coeliac disease.
- Hot equipment. Ovens, baking stones, steels and cast-iron pots used for bread reach very high temperatures. Use suitable oven gloves and take care when handling them.
